Monitoring the current season and weather is easy. The HUD's bottom-left corner displays icons indicating the time of day and season. For a more detailed overview, open your map and access the Environment Overview; this provides comprehensive information on the current conditions.
Optional Quests also feature pre-set times of day and seasons. When undertaking these quests, you'll temporarily experience the specified environment, regardless of the current season in the main game.

Fortunately, you can manipulate the in-game weather. To do so, pitch your tent, access the BBQ Menu, select "Rest," and adjust the desired Environment and Time before your hunter wakes up.
Keep in mind that resting comes with a 300 Guild Point cost and is only available to High-Rank Hunters. Additionally, you cannot rest during an active quest.
